Carrots’colour

What color are carrots?
Well, the answer isn’t that simple…

They can be orange, or yellow, white, purple, black…

The external color is given by the pigments proportion (beta-carotene or anthocyanins), a factor which in turn depends on the type of seed, the conditions of the soil, climate and more…

However, if today (almost all over the world, as far as I know) carrots are often associated with the color orange, in the past, this was not the case.

The image below bears witness to this: a detail of the artwork “Market scene“, painted by the Flemish artist Pieter Aertsen around the middle of the 16th century.

Here you see the carrots as they were at that time: purple!
