Why is panettone a “Christmas cake”?

We have officially entered that period in which the aromas of Christmas cakes hang in the air!

Now, everyone has his/her own opinion on which cake is the best.

Surely the one with the most historical tradition is Panettone tho.
Its first written recipe is dated 1549, although it is believed to be already popular, at least in Milan, since the end of the 15th century.

And why is it a Christmas cake?
Well, at that time the expensive and rare wheat flour was the preserve of the upper classes.
The poor had to make do with less valuable flours, made of mixtures of rye, spelled, oats and barley.

On Christmas day, thanks to the good concession of the lords of the city, all the bakers in town were allowed to use wheat flour to make “Pan de Toni“, literally “the bread of the Lords”, and distribute it to the common people.
