\nSo, yeah… Let’s talk about island hoods<\/strong>, aka central hoods<\/em>.<\/p>\n

These are installed when there is another “island” in the restaurant: an island rests on the floor, and is composed of cooking equipment positioned in the centre of the room (or, better said, not adjacent to a wall).<\/p>\n

There are no alternatives of any kind: if you decide that the kitchen layout must have a cooking island, then you must also accept the island hood (we don’t want an integrated downdraft hood for our restaurant kitchen, do we?).<\/p>\n

Anyway: do islands work? Yes, of course.<\/p>\n

They do exactly the same job as their wall-mounted counterparts. Of course, having 4 exposed sides (and not being able to be equipped with any bulkhead<\/a>),<\/p>\n

They are much more sensitive to drafts and other “disturbances” that undermine the capture efficiency (compensated air circulation<\/a>, presence and motion of kitchen staff<\/a>, weak thermal plume<\/a>).<\/p>\n

For this reason, it is always necessary to calculate the flow rate<\/a> with a more careful eye in the presence of islands.
