Those who leave the pizza crust on the plate, and those who know how to enjoy life!<\/p>\n<p>All kidding aside, the pizza crust is more than the mundane &#8220;edge.&#8221;<\/p>\n<p>First of all, it is a distinctive character of the Pizza according to the Neapolitan tradition: soft, well leavened and <em>honeycombed<\/em>, between 2 and 3 cm high.<\/p>\n<p>Moreover, the crust can also be stuffed. Personally, I\u2019d suggest ricotta cheese for that.<\/p>\n<p>And eventually, its name in Italian, <em>cornicione<\/em>\u00a0(literally &#8220;cornice&#8221;) recalls a classical architectural element.<\/p>\n<p>I mean, how can you possibly get rid of it??<\/p>\n<p>And here is a photo of a pizza with a fantastic crust, prepared by the <em>Ta&#8217;Dobra<\/em> pizzeria in Ljubljana (Slovenia).<\/p>\n<p>Obviously, the dough was leavened in the <strong>INOX BIM<\/strong> <a href=\"https:\/\/www.virdex.it\/pizzeria\/?lang=en\">Retarder Proofer<\/a>![\/vc_column_text][\/vc_column][\/vc_row]<\/p>\n<\/div>","protected":false},"excerpt":{"rendered":"<p>[vc_row][vc_column][vc_column_text text_larger=&#8221;no&#8221;][\/vc_column_text][vc_column_text text_larger=&#8221;no&#8221;]There are two kinds of people in the world.
